Italian Wedding Cakes

Deciding on a wedding cake can be an overwhelming experience. Choosing a flavor of cake is a task all in its own since there are dozens to choose from -- white silk, red velvet, marble, chocolate raspberry…the list goes on and on. And don’t forget the design and colors of the cake too. With an Italian wedding cake, the choices are simple and the tastes are mouth-watering.

The traditional Italian wedding cake is the mille foglie. Mille foglie is made of layers and layers of filo pastry, hence the name, which translates to “a thousand leaves.” Each layer is topped with a layer of thick chocolate and vanilla cream.

A crostata di frutta is a fruit tart with vanilla cream. It can be covered with fresh fruit and even served as an addition to another cake. This cake is typically made during the summer as that’s peak time for the best fruit and berries.

Italian rum cake is also a favorite wedding cake. It’s a layered sponge cake soaked in rum, usually with vanilla cream or custard between layers, and is decorated with sliced almonds around the outside of the cake. Ninni’s Italian Bakery in Akron offers an Italian torte with three layers of rum flavored sponge cake, with a layer of vanilla custard and a layer of chocolate custard between the sponge cakes. It’s topped with whipped cream and decorated with whipped cream roses.

Torta Chantilly is a delicious sponge cake iced in a Chantilly cream with chocolate shavings sprinkled over it.

And last but not least, St. Honore cake is made with flaky all-butter puff pastry shells and is filled with pastry cream and a layer of sponge cake, sometimes with a light brushing of rum.

There are different variations to these wedding cakes so, of course, indulging in some taste tests is highly recommended (and enjoyable). Having a traditional Italian cake at a wedding makes it all the more memorable, not only for the happy couple, but for the guests as well.
